Reason being that the DNS servers as provided by the wireless/cellular carrier are sometimes optimized, or return custom values that normal DNS servers will not (either different proxy IPs, longer or shorter TTLs, or resolve things that just don't resolve on the public Internet) This varies greatly by physical location, and by carrier.

The "increased data usage" is subject to some debate; in some cases DNS traffic from your device to the provided DNS servers do not count against data usage because it is kept "in network", but when you use a 3rd party DNS like OpenDNS your DNS data is now leaving the cellular backbone network and going over the Internet, although DNS traffic is small, when your carrier is nickel-and-diming you it can add up.]]>
