Can these two go along properly in the router's configuration section? -

Right - this will depend on the router(s) and possibly the service itself. Contact Verizon, or look in the device config interface. If you have other services like TV over FIOS, you may need to keep the DNS servers for Verizon in the main FIOS gateway. If you had a second router to connect computers, you may be able to configure OpenDNS on that and put it behind the FIOS gateway.
Unless another FIOS customer answers your question, you may just need to ask Verizon yourself. But it seems that this will work, again, depending on which equipment you have.
