On the Xoom? Wherever your network settings are. Wifi > Advanced is sort of a generic Android place to have this.

U-Verse? No. You'll lose your IPTV and/or VOIP, whatever services you have. If you have internet only, there is a small possibility that you could.

http://www.motorola.com/Support/US-EN/Consumer-Support/TABLETS
If you have further tablet-specific questions, which one?

I don't know, but we aren't looking specifically for DHCP settings, but TCP/IP DNS settings. If you would pull the support link for your exact model and Android version from the Xoom link I provided above, I could at least look at the available documentation.

Well, you found better than what I could - my only guess from documentation was
Apps > Settings > Wireless & Networks.

Note, though, that OpenDNS is for networks, not so much devices. If you connect to networks other than your own (business, public WiFi, etc.), you can't be using OpenDNS filtering in these networks anyway. Also, wireless internet (3G, etc.) generally does not allow you to change settings either, and you likely do not even have your own non-proxied, non-NATted IP address.

Now, if you use this device in your own network, it will use the settings you have set on your router.
